Advent Calender Day 11

December 11th...

Vegan Gingerbread Cookies!!!

I had all kinds of cookie decorating plans, that did not come to fruition, due to the fact that "OCD Astri" got on a five hour spice organizing project.
Spice project will be finished during the Christmas break.
Stay tuned, I'm really excited about this one. :-)

Yes, the mugs are empty because we were so hyped up on the cookies that if we had coffee there would be no sleep tonight.
For the sake of the the thought of drinking coffee with these, though, the mugs were included in the photo.

Some of the dough was set to the side and mixed with butterscotch chips for these cookies:
(This all of sudden and without warning turned these into "Not Vegan".)

  2. I'm trying to imagine what "non-hydrogenated margarine" could possibly be.

    They do look delicious. I was looking up your Berlinerkranser recipe earlier today, preparatory to making some this week. (I don't suppose there's a vegan version of those.) :)

  3. Ha ha vegan... that's just something we do halfway to placate one of our children. We used BUTTER!!! Hope he's not reading.

    I hope you both make the buttery shortbread and berlinerkranser...IMHO, they are heavenly, and what could be more appropriate this time of year?
